Rib eye in blackberry sauce


Mix the orange juice, vinegar, sugar, thyme, and olive oil in a mixing bowl. Set apart. Season rib eye steaks with salt and pepper, and immerse in the mix prepared previously. Let stand for at least 35 minutes. Cook for approximately 15 minutes.

For the sauce: Heat the blackberry marmalade in a pan over a low flame. Add the liquid in which the steak was immersed. Add salt and pepper as desired and let stand for 5 minutes. Decorate the steak with some blackberries.
