Pork loin with berry reduction
- 6 thick slices of pork loin
- 225 g. of raspberry marmalade
- 2 cups of beef broth
- 250 g. of thinly sliced strawberries
- 250 g. of berries
- Chopped parsley
- 1 red onion, sliced
Season the pork loin with salt and pepper and seal in a pan. Afterwards, remove and put in the oven for 35 minutes at 400°. Make the glaze (scrape some of what is left in the pan with some liquid) with the beef broth, add the marmalade and more broth, add the berries and half of the strawberries. Wait until it is reduced to half the liquid, and add the onion.
Once the meat is ready, remove from the oven and glaze. Finally add the rest of the strawberries and the chopped parsley.
